About Lexus: Where Purpose Meets Practice

Armed with a Bachelor of Science in Community Health, an MBA in Healthcare Management, and a deep understanding of community needs, Lexus Collins blends academic expertise with grassroots action to confront the root causes of diet-related disparities.To further deepen the Foundation’s work in food literacy and wellness advocacy, Lexus completed Introduction to Food and Health through Stanford University’s School of Medicine where she explored the intersection of nutrition, chronic disease, and community well-being—offering science-based insights that now shape Rooted in Health’s refined sugar-free programs and education initiatives.Rooted in Health Foundation was launched with one goal: to make whole-food nourishment and wellness education truly accessible especially in communities most impacted by food injustice.Based in North Tarrant County, Lexus leads with transparency and purpose—designing programs that center cultural responsiveness, food literacy, and real nourishment. Through this foundation, she champions a model of intentional nourishment that prioritizes equity, education, and community wellness.


Purpose & Action

Through Rooted in Health, Lexus wears many hats:
• As a Community Nutrition Advocate, she expands access to nutrient-dense, sugar-free food across underserved neighborhoods.
• As a Wellness Literacy Educator, she equips families with tools to read labels, identify harmful ingredients, and choose foods that align with their values.
• As a Whole-Food Wellness Facilitator, she curates free resources, pantry reset kits, and educational events grounded in real nourishment—not additives.


Leadership & Vision

As President and Executive Director, Lexus guides the Foundation’s strategy, programming, and community impact—committed to restoring the relationship between food and well-being by meeting people where they are.Her leadership is grounded in equity, authenticity, and action. From developing refined sugar-free resources to building local partnerships, Lexus works to make intentional nourishment not only possible—but personal and practical for the communities most often left behind.Every initiative is designed with cultural relevance, accessibility, and dignity at its core—because “real wellness starts with real respect.”


Beyond The Foundation

Outside of her work with Rooted in Health Foundation, Lexus is a devoted wife, proud mother, and cybersecurity professional. Her leadership is grounded not only in policy and programming, but in the everyday realities of womanhood, family, and service—bringing balance, resilience, and real-world wisdom into every space she enters.She believes wellness should be practical, secure, and rooted in love.
